Toasted sesame oil is pressed from roasted sesame seeds, which gives it a deep amber color and an intense nutty, almost smoky aroma. It is a seasoning, not a frying oil: a teaspoon stirred into a stir-fry at the end, a dressing, a dumpling dipping sauce or a bowl of Korean bibimbap transforms the dish. Plain (light) sesame oil, pressed from raw seeds, is pale, mild and mostly used for cooking in Indian and health-food kitchens; the two are not interchangeable.
How to buy
Look for the words "toasted", "roasted" or "dark" on the label and a color between amber and dark brown; pale yellow oil is the untoasted kind. Kadoya (Japan) is the standard in most US supermarkets' Asian aisle, and Ottogi or Chung Jung One from Korean markets are excellent and often cheaper per ounce. Buy small bottles (5–8 oz) because you use it by the teaspoon, and check that the ingredient list says 100% sesame oil, not a blend with soybean oil.
How to store
Keep it in a cool, dark cupboard away from the stove; heat and light make it go rancid. An unopened bottle lasts about two years, an opened one 6–12 months at room temperature or longer in the fridge (it may cloud but clears again when warm). If it smells like old crayons or paint rather than toasted seeds, throw it out.
Substitutes
- Perilla (wild sesame) oil, 1:1 — same nutty role in Korean dishes, slightly more herbal.
- Plain sesame oil plus a pinch of toasted sesame seeds, 1:1 — you lose most of the aroma but keep the flavor direction.
- Peanut oil, 1:1 — provides a roasted nut note but tastes clearly different.
- Toasted walnut oil, 1:1 — works in dressings and cold noodles, not in stir-fries.
How to use
Add it off the heat: its smoke point is low and the aroma burns away in a hot wok, so drizzle 1/2 to 1 teaspoon over a finished stir-fry, soup or noodle bowl. Use a light hand in marinades (about 1 teaspoon per pound of meat) since it easily overpowers garlic and ginger. For a quick dressing, whisk 1 part toasted sesame oil with 2 parts rice vinegar and 1 part soy sauce.
