Ingredients
- 400 g (14 oz) chicken breast, cut into chunks
- 200 g (7 oz) fresh pineapple, cut into chunks
- 10 g (about 1/3 cup) fresh mint leaves
- 2 tablespoons olive oil
- 1 teaspoon sweet paprika
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon lemon juice
- 8 wooden skewers

- In a large bowl, whisk together the olive oil, paprika, salt, black pepper and lemon juice.
- Add the chicken and toss until evenly coated. Let it marinate for 15 minutes.
- Thread the chicken, pineapple and mint leaves onto the skewers, alternating as you go.
- Preheat a grill or grill pan to medium-high. Grill the skewers for about 7 to 8 minutes per side, until the chicken is cooked through and golden.
- Let the skewers rest for a minute or two, then serve.
Tips
- Soak wooden skewers in water for 30 minutes before grilling so they do not burn.
- Swap the pineapple for mango for a different tropical twist.
