This Italian-style baked sea bass leans on fresh lemon and herbs, with spring vegetables roasting right alongside the fish. It is light, healthy, and simple to make, yet packed with flavor.

Ingredients

  • 4 fresh sea bass fillets (about 150 g / 5 oz each)
  • 1 lemon, juice and zest
  • 1 small bunch fresh thyme
  • 1 small bunch fresh rosemary
  • 2 garlic cloves, sliced
  • 2 tablespoons olive oil
  • Salt, to taste
  • Black pepper, to taste
  • 200 g (7 oz) cherry tomatoes, halved
  • 150 g (5 oz) green beans, trimmed

Instructions

  1. Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.
  2. Place the sea bass fillets on the sheet and season with the lemon juice, olive oil, salt, and pepper. Scatter the lemon zest, thyme, rosemary, and garlic slices over the top.
  3. Arrange the cherry tomatoes and green beans around the fish.
  4. Bake for 20 to 25 minutes, until the fish flakes easily and the vegetables are tender.
  5. Let cool slightly and serve.

Tips

  • Any white fish works here; cod or halibut are great substitutes for sea bass.
