This dish pairs the sweetness of fresh spring peas with lean, high-protein chicken breast, making it a great fit for anyone who trains and wants to eat well. It is simple, fresh, and quick enough for a busy weeknight.

Ingredients

  • 2 chicken breasts (about 300 g / 10 oz)
  • 150 g (1 cup) green peas
  • 2 tablespoons olive oil
  • 1 teaspoon minced garlic
  • A few fresh basil leaves
  • 1 tablespoon lemon juice
  • Salt, to taste
  • Ground black pepper, to taste

Instructions

  1. Season the chicken breasts with salt and pepper and let them sit for 10 minutes.
  2. Heat 1 tablespoon of the olive oil in a skillet over medium-high heat. Sear the chicken until golden on both sides, about 5 minutes per side. Remove and set aside.
  3. Add the remaining olive oil to the same pan, sauté the garlic until fragrant, then add the peas and stir-fry for about 3 minutes.
  4. Slice the chicken and return it to the pan. Add the lemon juice and basil and toss for 1 more minute.
  5. Adjust the salt and pepper, plate, and serve.

Tips

  • Pound the chicken to an even thickness so it cooks evenly.
  • Frozen peas work fine; just thaw them first.
