Ingredients

  • 300 g (10 oz) chicken breast, diced
  • 200 g (7 oz) fresh pineapple, cut into chunks
  • 1 red bell pepper, diced
  • 100 g (3.5 oz) green peas
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 2 tablespoons olive oil
  • 3 cups cooked rice, cooled
  • Salt, to taste
  • Black pepper, to taste
  • Fresh cilantro, chopped, for garnish

Instructions

  1. Heat the olive oil in a large wok or skillet over high heat. Stir-fry the chicken until golden, then remove and set aside.
  2. In the same pan, cook the onion and garlic until fragrant, then add the bell pepper and peas and stir-fry for about 5 minutes.
  3. Add the pineapple and stir-fry for 1 to 2 minutes, then add the cooled rice and mix well.
  4. Pour in the soy sauce, return the chicken to the pan, and toss until everything is evenly coated. Season with salt and pepper.
  5. Sprinkle with cilantro and serve.

Tips

  • Day-old rice works best: drier grains fry up loose and fluffy.
  • Feel free to add other seasonal vegetables such as carrot or corn.
